Anna's WHITE LEEK SOUP ~In about 45 minutes!

Leek Soup




Ingredients:
See below...

Directions:

Leeks
Get some leeks.
(About 4 or 5 medium size).

Get your soup pot. (A big one).

Use about 2+/- quarts water.
Ham, or ham bone (I use turkey ham). About 3 cups worth
Chop up a couple of sticks of celery. (Or "choop" them if you prefer). hehehe
1 medium onion
Chop whites of leeks. (I quarter them and then chop to 1/2").
Throw in 1/2 dozen cut up (soup size chunky) pootatoes.
2-3 carrots. (I shred mine on the old knucklebuster).
Couple tsps of chicken bouillon.
No salt- I throw in some Mrs. Dash garlic blend.
1 tsp or so of coarse pepper. (I use McCormicks "Seasoned Pepper Blend" on everything).

After everything is yummy, shut heat off.

Then add either:
a.) packets of nonfat dry milk,
or
b.) non dairy coffee creamer
to taste.

Add couple TBS of real butter.
Sprinkle with parsley...

Serve with some cheesy toast or croutons.

Mmmmmmmmmmmmm!

PS
I use either real smoked ham or turkey ham.
(Some of us prefer the turkey ham because 'real' pork can set off a migraine).

  6. Thanks for posting this! (I love the way you write recipes. I often use words like: a hunk, or chunk, or smidge, or when I add shredded cheese or chocolate chips or nuts it's a small or large handful.)

    This sounds so easy to make. I buy turkey sausage all the time, I love it. That would probably work OK wouldn't it?

    Leeks are pretty expensive here, but I'd love to try this. I'll let you know when I do.

  7. funny, I write my recipes as tsp, cup, etc but I cook as handful, smidge, splash....


    Ours are very similar... only my leeks are ALWAYS chooped.

    Yeah, at gunpoint I reluctantly told the guy the recipe.
    He paid me HALF of your ten grand as he begged for just for one bowl.
    I spiked it with rat poison. Now he's dead. And I also have the other half of your money.

    I have decided that will afford me another night in Minneapolis. Thank you muchly.

    Not one to stand on custom, I always write like that. Kinda like how I blog.
    But people used to tell me that they liked how I wrote letters (back when I could still write a decent letter longhand)...

    But cooking, baking are NOT exact sciences. If you don't mess up every now and then you will never create a new recipe!

    Turkey sausage would HAVE to be fried out first. There is nothing else above that needs frying.
    AND you will lose that smokey ham flavor too. Maybe get a bit of ham base for your recipe then.

    Why on earth would leeks be expensive?
    I grow enough for 2 years of soup with one $1.19 packet, and 10 feet of dirt.
    (Chop and freeze.

    Can't wait to hear how yours turns out too!

    No wonder you have to put it through a blender.
    AND,
    I try NOT to allow anything green and liquified in my mouth. I further try to avoid swallowing it.
    Well, unless it is runny guacamole...

  17. I use the tender part of the green not the woody bits. It is the potato peel and carrot that need the blender. I like the soup creamy not chunky is mainly why. you could eat it either way.

    Mine is WAY healthier...

    Green is good for you.

    Sans gallbladder now I cannot even enjoy chicken booyah.
    So have to settle for plain old chicken soup.
    (Which I do NOT put through the blender).
